Pupitres

Pupitres are structures, usually made of wood, consisting of two boards filled with holes where wine bottles can be stored with their necks facing downwards at a specific inclination typical of the classic method procedure for producing sparkling wine and champagne.
The bottles are stored upside down tilted in such a way that the sediment suspended in the wine is collected in the neck of the bottle. To facilitate manual collection, the bottle is rotated about 1/4 to 1/8 of the way up. Once the residues have settled in the neck, they are removed by disgorging or degorging.
