Degorgement
Disgorgement of sparkling wine occurs when the sediment settles in the neck of the bottle stored upside down. This is a fundamental procedure for wines re-fermented using the classic method to remove fermentation residues.
Disgorgement involves freezing the neck of the bottle at -27°C. The bottles are then rotated by 180° so that the residues flow into the cork and are uncorked using special degorgers.
