QUESTIONS AND ANSWERS
° Does the use of the plant allow me to add clarifiers?
Yes, all types of clarifiers can be added. For carbon, a maximum dose of 70-80 gr./Hl. Clarifiers are generally not needed, rarely 3-5 gr./Hl of gelatine is required.
° How do you dose the clarifiers?
The plant doses the clarifiers itself via a Venturi tube. There is no need for dosing devices because when working in refill, the clarifying agent dose is prepared before starting work.
° If I have to treat the last must in the evening and then wait to do the racking, do I have to stay in the cellar until late?
No, the last must of the evening is treated and then racked the next day. The lees once risen do not fall back.
° Which pump should I use?
The system already has its own circulation pump.
° Which tank can I use?
Any tank, as long as the partial and total discharge valves are not too close together and preferably not on axis. In this case you suck in from below and return to the bottom of the tank by passing with a tube through the top manhole.
° Do you need a pre-filter?
Generally no. Our many experiences tell us that it is sufficient to correctly follow the instructions of use to avoid the use of a pre-filter. Competitors require one or more pre-filters because they pass the whole mass through the pump, we always recycle the same must. In any case it is possible to request the pre-filter as an option.
° What do I do with the lees?
The quantity of lees is so small that we can consider not filtering them and giving them in cynical performance. Some people accumulate lees and do a filtration every three or four days, others have instead put out the vacuum filter because of the small amount of lees
° When should I put the enzyme?
Immediately, on the tank of the press, so that at the end of the pressing the time needed to
for the enzyme to act.
° Does the must have to be chilled?
Not necessarily. We recommend not going below what will be the temperature of fermentation temperatures. At lower temperatures, the enzyme would work poorly and unnecessary costs would be incurred.
° Is nitrogen consumption high?
No. Almost 2000 hl of product can be treated with a normal nitrogen cylinder.
