The destemmer has a hopper and a case made entirely of stainless steel, as are all the screws used.
Inside the hopper is an auger, made of stainless steel, which is used to constantly drag the product inside the rollers.
A powerful motor mounted on the machine moves all the various mechanisms, such as the rollers for crushing, the upper auger and the de-stemming shaft that separates the grape from the stalk via a removable stainless steel grid.
Gears and rollers are all made of nylon. Product robustness and reliability are guaranteed by the high quality materials used in production.
Thanks to special supports, the rollers are adjustable by a few millimetres.

The protective casing supplied (in assembly kit) must be placed on top of the hopper to prevent access of upper limbs to the auger and roller drive area. The machine must be placed on top of a container for collecting the crushing, as described below.
After starting the engine, place the bunches of grapes in the hopper, which are taken by the auger to the rollers where the crushing takes place. Once the grapes have been crushed, they pass to where the flapping shaft is located, which separates the berries from the bunch by performing the destemming. The stalks come out at the back of the machine, while the grapes, passing through the holes in the grid, are ready for fermentation.
The dimensions of the stalk outlet are determined by safety and functional requirements, with the aim of facilitating the evacuation of the stalks. In the event of abnormal accumulations that may obstruct the mouth, the machine must be stopped and only then should the obstructions be removed.
